Red Velvet Pancakes

Last Sunday night Jim and I were watching The Food Truck Revolution and saw the Buttermilk Truck and their Red Velvet Pancake bites. I turned to Jimmy and told him I HAVE to make those!

After an extensive Google search I came across ClaireThomas's The Kitchy Kitchen blog and found a beautiful blog and a recipe that I knew would be wonderful.

The Kitchy Kitchens Red Velvet Pancakes

(printable copy)

1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons white sugar
2 tablespoons unsweetened cocoa powder
1 large egg, lightly beaten
3/4 buttermilk
1/4 cup creme fraiche or sour cream
3 tablespoons unsalted butter, melted
1 tablespoon red food coloring
1 teaspoon vanilla extract

For the Mascarpone Spread:
4 oz softened mascarpone
2 oz creme fraiche
2 tablespoons white sugar
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest

In a large bowl whisk together the dry ingredients. In a separate bowl whisk together the egg, buttermilk, and creme fraiche or sour cream, melted butter, red food coloring, and vanilla extract. Add them together and whisk just until combined. Batter may be a little lumpy.

Heat a griddle over medium high heat. Grease griddle and then add a small scoop of the batter. Wait for the pancakes to bubble (2-3 minutes), flip and cook for a minute or two more.

Meanwhile, mix all of the ingredients in the mascarpone spread together and top the pancakes.
