Chicken Fillets in Golden Curry Sauce



This is a Nigella Lawson recipe. My family is used to me making all kinds of unique things. This wonderful Thai curry recipe definitely got a thumbs up! It is an exclusive recipe only available to those who own the new Nigella iphone app.



Chicken Fillets in Golden Curry Sauce

2 (6 oz) chicken breasts
1 tablespoon Thai yellow curry paste
1/3 cup Chinese cooking wine
2 tablespoons soy sauce
2 teaspoons garlic oil
2/3 cup coconut cream
2 tablespoons coriander, roughly chopped

Cut the chicken breast in half horizontally, then flatten them the best you can,
to give 4 long fillets, and put them in a bowl.

Add the curry paste, you might want to wear disposable gloves, smear the curry paste over the chicken.

Pour the Chinese cooking wine and soy sauce over the chicken and leave to marinate for 10 minutes.

Heat the garlic oil in a pan, then add the chicken strips. . Cook on one side for 5 minutes, then turn them over.

Whisk the remaining marinade, adding 75 ml water and the coconut cream, then pour this over the chicken and cook at strong simmer for another 10 minutes.

Then transfer to a couple of plates or a serving dish and sprinkle with chopped cilantro.



~Recipe Review~ I WILL be making this again, the chicken was so tender and juicy. I also love that it was so fast to prepare and tastes like you spent all day in the kitchen. I have never tried cooking with Yellow Curry Paste before but I just love the intense combination of flavors.


We served it with turmeric basmati rice, baby peas and naan.
