Buffalo Chicken Salad

Here is another quick and easy dinner for weeknights.

Buffalo Chicken Salad is one of Jimmy and my favorite dinners.

It has all the flavors of the classic buffalo wings but has the fresh crisp salad and crunchy croûtons and celery with that creamy blue cheese dressing.

To make the sauce for the chicken mix together 1/2 cup of Frank's RedHot Sauce and 1/2 cup of brown sugar. Mix and set aside.

Make a simple salad of romaine, shredded sharp cheddar and chopped celery.

Take your favorite popcorn chicken (or make your own) and after baking toss them in a plastic bag with the sauce mixture.

I get my chicken at Sam's Club. They make wonderful popcorn chicken so I see no need to bother with making them after a long day at work. Mom's need a break too.......

Top with croûtons and a good blue cheese dressing and you have one irresistible salad!
