Fish Tacos

For our Labor Day lunch we had Spiced Rubbed Mahi Mahi Tacos with Jicama slaw with Tropical salsa and Jalapeño hushpuppies on the side.

Spice Rub for Fish

1 teaspoon Kosher Salt
1 tablespoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 tablespoon garlic powder
1 teaspoon onion powder
2 teaspoons cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 teaspoon dried basil

Mix all ingredients together. Coat fish lightly with olive oil then rub on spice mix. Grill fish until it flakes easily.

We have found that our rice cooker does an excellent job at steaming tortillas. Just fill bottom with a couple of cups of water and put tortillas in the steamer basket and turn on until tortillas are hot.

Jicama Slaw

1 medium jicama, peeled and shredded
1/4 cabbage, shredded
1/2 a small red onion, chopped
1/4 cup cilantro, chopped
juice from one lime
coarse salt and pepper
2 tablespoons olive oil

Combine all ingredients and eat immediately.
