Pumpkin Pancakes

We woke up this morning to a crisp breeze and cooler temperatures.

The first thing I thought was "Fall is finally here!"

I LOVE this time of year..........
pumpkins, autumn leaves, wearing boots, big chunky sweaters, football and tailgating.


I decided to have a taste of Fall and make some pumpkin pancakes.

Pumpkin Pancakes

3 cups flour
1 ½ teaspoons baking soda
3 teaspoons baking powder
1 ½ teaspoons cinnamon
¼ teaspoon ginger, heaping
¼ teaspoon nutmeg, heaping
3 eggs
1/3 cup oil
1/3 cup water
3 cups buttermilk
1 ½ cups canned pumpkin

Mix first 6 ingredients ingredients.

In a separate bowl, beat together the eggs, oil and water. 

Stir in buttermilk and canned pumpkin.

Mix together dry and liquid ingredients.

Pour onto a hot griddle and cook until done.

Sprinkle with confectioner sugar if desired.

*Serves 6-8

This recipe makes a big batch of pancakes, enough to feed at least 6 to 8 people.

mmm.... pumpkin pancakes, maple syrup and a piping hot cup of coffee.

Yes, folks....... Fall is definitely here.....
