Tropical Salsa

This is my all time favorite salsa, it just screams of Summer! Since we are celebrating the end of Summer this weekend I though it would be appropriate. It's great with tortilla chips, on fish, fish tacos or on chicken.  The best part is that it is extremely simple!

Tropical Salsa
8 ounces (1 cup) tropical fruit, drained (I use Dole's Tropical Fruit either in the little cups or a jar)
1 tablespoon cilantro
1 green onion, chopped
1/2 lime, juice of
1 small jalapeƱo, ribs removed, seeded and minced
kosher salt, pinch

Chop drained fruit into small pieces.
Combine the fruit and remaining salsa ingredients in a bowl.
Cover and refrigerate until chilled.
Serve with chips or as a topping for fish or chicken.

Isn't it gorgeous? I just love the colors!
