I love Salmon! It's a fish even people who don't like fish can enjoy. It's so versatile, it's firm enough to grill, and can be cooked in many different ways. Here is one of my favorite recipes........
Asian Glazed Salmon
4 (6 oz) Salmon Fillets
4 tablespoons Brown Sugar, packed
4 teaspoons Dijon Mustard
1 tablespoon Soy Sauce
1 teaspoon Rice Vinegar
Preheat oven to 425 degrees.
Combine brown sugar, dijon, soy sauce and rice vinegar in a small bowl.
Mix until sugar is dissolved.
Place Salmon on a baking sheet and brush with glaze mixture.
Bake at 425 degrees for approximately 15 minutes or until done. Brush with glaze several times during baking.
Broil for 1 minute to caramelize glaze.
Salmon is on Sunday night rotation at my house. The kids love it and it's so fast and easy to prepare that you don't feel like you've spent all day in the kitchen. We try and have it at least twice a month. This recipe is foolproof! It comes out perfect everytime.
The Asian Glaze whips up in just a minute or two. I like to get the glaze on the salmon a few hours before dinner so all I have to do is pop it in the oven. I also make a double batch of the glaze so we have plenty to drizzle over our wild rice. You will want to do this also.... it is amazing over rice!
There is nothing better on a Sunday night than to have a wonderful dinner that takes practically no time at all. There is no wasting a weekend at my house, they are too short as it is!
