Stained Glass Fruit Salad

Last weekend our close friends Kevin and Jennifer came for an 
overnight visit.  Their daughter Kenzie was in a dance competition 
here in town.  (They won 2nd place by the way!)  

Our families have a long friendship that started a couple of months 
after our daughter came home from Korea.  Both our families attended 
our adoption agencies Fall Festival that October 2000 and while Bay 
had come home in August, Kenzie hadn't come home yet.  Jennifer's 
mom Gayle approached us and told us that Bay looked a lot like their 
daughter still in Korea.  She wanted us to go over and meet them.  
Well......we have been close friends ever since.

Meatball Pesto Pizza

Jim and I were so excited to have a day warm enough to eat out on 
the patio on Friday evening.  I have to say that I seriously miss 
summertime.........sigh..........  I can't wait for swimming in the pool, 
picnics, the sound of lawnmowers and a garden full of basil to make 
my summer pesto.  When I start making my own again I definitely plan 
on having this pizza.  The whole time we were eating it we were both 
mumbling wow.......omg........this is so good......

I decided to make up a batch of meatballs and cut them in half to put 
on pizza for something a little different.    I used a mamma marys pizza 
crust and whole store bought container of pesto.  I just split it between 
both crusts because I wanted to keep it simple.  I have a tendency to 
be heavy handed on my pizza.....go figure.......  Anyway besides the 
mozzarella and some parmesan, I just added some mushrooms.  I 
adore mushrooms and normally use fresh and then saute them in 
garlic butter but on this night we were getting ready for overnight 
company and I didn't have time to run to the store.  No worries though
.........can mushrooms or not it was delish!

German Meatballs

I'm part German!  I had no idea!  My cousin Marshall's son Joey has 
been doing a lot of research on the family and he found out that on 
my Grandfather Cecil's side (his grandmother was Louisa 
Funderburk) we were related to a guy named Adolph von der Burg.   
Adolph was the father of three brothers one of which was Johan......
who was next in line for the crown.  

Who knew?  Cool, huh?

California Club Sandwiches on Sourdough

Today I want to share with you my family's absolute favorite sandwich!  I made it this week on Spring break because my oldest son Tyler is home from College and he requested it.   
I also like to have sandwich night once a week.  It gives me an easy dinner to prepare after work and no one ever complains!  This is great to have if you have leftover bacon from breakfast, it makes the assembly that much faster.

To start with you need a fabulous bread.  I buy Panera's Sourdough because I think it is amazing.  It's tangy and the crust is little chewy, it's a great start to a perfect sandwich. 
See how gorgeous it is in the photo, and any leftover makes great toast the next morning!  

Next make sure your veggies are very fresh.  The cucumber, cream cheese, avocado and sprouts give this sandwich a really bright,  fresh taste.  It's so amazing!  Oh my gosh......
I'm craving one right now!

Guinness Corned Beef, Colcannon and Irish Soda Bread

Happy St. Patrick's Day!  

March is one of my favorite months.....Spring starts, flowers begin to bloom,
there is the promise of Summer in the air and..... St. Patrick's Day! 
We celebrated St. Patrick's Day on Sunday and my family and I enjoyed a
good ole Irish dinner with Guiness Corned Beef, Colcannon and Irish Soda
bread.  You couldn't get a easier recipe for Corned Beef than this and the
Guiness gives it a deep authentic flavor.  It's best to cook Corned Beef low
and slow.  The brisket cut is a realitively cheap, tough cut of meat  but with
some love and patience it can turn out nice and tender.

Korean Keema Breakfast Burritos

After we made Nigella's Korean Keema the other day, Jim and I 
decided we had to try it in a breakfast burrito for a little Korean/
Mexican fusion action.  We both love savory foods for breakfast 
and are always ready to find a new flavor combination to wake up 
our palate!  No pun intended......... ;)

Nigella's Korean Keema

Korean food is not unusual at our house.   My youngest child, Bay was adopted from South Korea in the summer of 2000.  Even before her arrival we started checking out Korean cuisine to learn more about our new daughters culture.  After trying the wonderful flavors I became obsessed with learning how to cook some of these amazing dishes.  I'm not an expert by any means but I do consider myself fairly well schooled in Korean cuisine.  

After Bay came home we started opening our home to Foreign Exchange students from South Korea.  We have had a total of 5 students but only one do we consider to be our oldest "daughter".  Yejoo was with us the entire year of 2004 and I loved to try out my dishes on her.   She was so sweet and said my dishes tasted just like her Omma's.

My absolute favorite Korean dish is Dak Bulgogi because I adore spicy food!  All good spicy Korean food starts with Gochujang red pepper paste.  When I saw Nigella's recipe for Korean Keema in her new cookbook Kitchen, I knew I had to try it!  I have to say.....she didn't disappoint me......   actually I think it's genius!  Keema is a Indian word meaning "minced meat" and is usually served as a curry with potatoes or peas.  Nigella turned it around with all the traditional flavors of Korea and she was spot on!  The only thing did was add a couple of teaspoons of garlic because I've never seen a Korean recipe without it!    

Korean Keema 

adapted from Nigella Lawson

1 lb. ground turkey
12 green onions, chopped
2 cups frozen peas
2 teaspoons peanut oil
4 tablespoons rice wine
4 tablespoon cilantro, chopped


4 tablespoons gochujang (red pepper paste)
2 tablespoons honey
2 tablespoons rice wine
4 tablespoons soy sauce
2 teaspoons garlic, chopped

Korean Rice or Basmati or sushi rice

In a large bowl whisk together sauce ingredients, stir in ground turkey.  Set it aside to marinate for about 5 minutes.  

Heat a wok or large skillet on high.  While it's heating up pour boiling water over peas in a strainer or colander.  When the wok is hot , add the oil and stir in the onions and peas.  Stir fry for about 3-4 minutes.

Add the turkey with it sauce and stir fry until no longer pink.  About 5 minutes.

Add 2 tablespoons rice wine with a little water to get all the juices left in the marinating bowl and add to the wok.  Continue to cook for a couple of minutes.

Serve over rice and top with cilantro.

Serves 4


My whole family LOVED this!  Way to go Nigella!  I just wish Yejoo was here to taste it!

Granola Breakfast Parfait

Today I thought I would do a quick post about my weekday breakfast.  
For years I have taken my breakfast to work and ate it once I got there.  
It's just so easy take it with me but it's not easy to find something 
portable that is good for you.  Over the years I've taken pop-tarts, 
breakfast bars and even cold pizza on occasion.  

Well, I've found one that is good for me, portable and delicious!    I take 
Weight Watchers vanilla yogurt.........I know, but I've tried numerous 
varieties and it is the best one.  Cross my heart!  Then I take a Cherry 
Blend Frozen has strawberries, cherries, black berries and 
blueberries in it and then to top it off Just Bunches Cinnamon cereal. 

I'm telling you it is so, so good! take it to work I get a red 
disposable cup(which I wash and re-use) and add the yogurt first, 
then the fruit and finally the cereal.  If you do it in this order the cereal 
will stay dry and crispy until you are ready to eat it.  I've even make it up 
the night before and it's still yummy.  Then I put a piece of foil on top 
and a rubber band to hold it.  Viola!  Ready to go to work and it only take 
seconds to prepare.

Homemade Parmesan Egg and Jam Biscuits with Center Cut Bacon

Here is a different way to use my Parmesan Eggs in a breakfast 
biscuit.  My absolute favorite food combo is salty/sweet and this 
breakfast has just that.  The salty parmesan in the egg and the 
salty bacon pair up really nicely to the sweetness of the blackberry 

I also like to make my biscuits from scratch.  It's just about the 
same amount of work as making the boxed mix kind but the end 
result is astoundingly different.  I've always loved making my own 
breads........  I have always gotten a great feeling of accomplishment
after making a loaf of bread or homemade biscuits.  No other 
kind of cooking gives me the same sense of satisfaction that bread 
baking does.
