Chocolate Eclair Dessert



The tag line on my blog says "sharing everyday dinners.........simple 
or extravagant" this is one of the simple but tasty ones! I used to make 
this back in the 80's all the time.  I told Jim that I was going to make this 
for Kevin and Jennifer when they came down and he said that I have 
been holding out on him.  We have been married almost 22 years and 
I've never made this for him!  Well.......Jim loved it and so did Kevin and 
Jennifer......not to mention....Tyler, Cassie, Tanner, Bailey, Shiloh, Kylan 
and Kenzie!

Jennifer brought me a treat!!  She brought me some of her homemade 
vanilla extract!  I am so excited to try it!!  You can view her beautiful blog

Chocolate Eclair Dessert


2 Jello Instant Pudding Mix (small packages)
3 cups milk
8 ounces non-dairy whipped topping
1 (16 ounce) box graham crackers
1 (15 ounce) container chocolate frosting

Mix vanilla pudding mix and milk together.  Fold in whipped topping.
Line a 9x13 inch pan with one layer of graham crackers.  Put half of the
pudding mixture over the graham crackers.  Place a second layer of 
graham crackers over the pudding mixture.  Put the remaining pudding 
mixture over the graham crackers.  Place a third layer of graham crackers
over the pudding mixture.  
Heat the tub of frosting in the microwave for 30 seconds to soften. (Don't
forget to remove the foil seal!)Spread the frosting on top of the last layer 
of graham crackers.  Cover and let set for a couple of hours or overnight.  


We have so much fun when we get together......I think we will do it again 
next month!
