Chili Dog Pizzas with Sauerkraut and Black Olives

Part chili dog, part pizza.......what better kid friendly dinner could you want?  

I've made this concoction for years now.  I've always enjoyed coming up 
with fun unique pizzas that have my family raising their eyebrows and saying
......really mom?  Tanner said after eating 4 or 5 slices, that this was his 
favorite home baked pizza besides the pesto roasted veggie one we do on 
the grill.  

The fun thing is that this seriously tastes just like a chili dog!  You get all the 
taste without all the mess with the buns breaking and everything falling off 
your dog and onto your plate.  Plus it's healthier cause you would probably 
want to serve this with salad instead of fries or chips.

Pineapple Coffee Cake with Sugared Pecan Topping

I love eating breakfast out on my deck on weekend mornings.   I normally make savory breakfasts but I was in the mood for a coffee cake today.  I adore coffee cakes and it all stems from when I was younger and went to stay the night at my Grandma and Grandpa Haddock's house.  They would ALWAYS have Sara Lee pecan coffee cake in the freezer for my breakfast.  I used to love picking the pecans off the top and savoring their roasted goodness. Ever since those days, coffee cakes and Lawrence Welk make me tear up wishing I could re-live just one of those precious weekends with them.   I miss them so much!  

Nothing against Sara Lee, I'm still quite fond of there version but pineapple is probably my very favorite fruit and I love subtle flavor it gives this cake.  Add the sugared pecans on top and you get a crispy crunchy outside with a soft moist center.  Oh, and a word to the wise.... serve it with bacon!!  Then you get the whole salty/sweet thing going and that will make you really happy.

Blazin' Buffalo Dip

Last weekend we had our friends Khris and Jeff down for dinner.  
I served my loose meat cheeseburgers with caramelized onions 
with fries and this dip.  Everyone LOVED them and this fabulous 
dip!  It's so addictive but no need to feel bad since I used all 
reduced fat ingredients.  After dinner we walked down to their 
house to watch the OKCThunder game.Unfortunuately the Thunder 
lost to the Mav's that night but we still had a wonderful time!

Fast and Easy Chicken and Noodles

I don't know about you but Chicken and Noodles are one of my ultimate comfort foods. This recipe is so fast and easy you can have it made in a very short time and it tastes like it's been 
simmering for hours!  I know there are some condensed soup haters out there but I'm a working mom and I'm up for anything that helps make a fabulous fast meal after work.  The end product 
ends up so rich and yummy that you would never know it was in there anyway...  ;)

The other thing that makes this meal so fast is a rotisserie chicken.  I LOVE rotisserie chickens!  They make my life so much easier.  They also make my three dogs really happy!  I seem to be their favorite family member when I'm de-boning one.  Somehow they just know the instant I walk in the door with one.  It couldn't be the wonderful aroma now could it?

Beef Enchiladas with Pepper Jack and Homemade Enchilada Sauce

I know I'm a little late for Cinco De Mayo but hey.....better late than 
never right?  My family LOVES Mexican food and we have it at least 
twice a week but I haven't made enchiladas in a while and I was really 
craving them!  Instead of using a canned sauce I decided to make 
my own.  It was really fun and quite gratifying to buy those dried 
peppers and actually use them and not let them sit in my pantry for a 
couple of years.  I've done that......   Don't be intimidated at all, it's really 
super simple to make your own homemade enchilada sauce.  I just love 
how it turned out....and the color!  Oh my gosh......I love the color, except 
that I got some on my favorite lime green  Longboat Key, Florida t-shirt.  
Note to self......wear your apron next time....oh and buy tons of t-shirts on 
your trip to Florida in a couple of months!  (sorry Jimmy....I have to...)

Loose meat Cheeseburgers with Caramelized Onion

I'm really excited about this recipe!  It's such a fun easy take on a cheeseburger.  My family just goes crazy for these things and they are much easier to make and I don't have to stand over a hot grill or anything.   I tweaked my regular recipe for loose meat sandwiches in this post and came up with this little baby!  
They start with mega flavor from the caramelized onions then after the beef is cooked I put the ketchup and mustard right in the meat.  That keeps them nice and moist.Then you just make your burgers in a 
casserole pan and stick them in the oven to heat.  They end up with a crispy bun with all that melty cheese on top.  Now normally I abhor American cheese but it kinda works here but you could use any 
of your favorites, for sure.

Pesto Pasta with Mushrooms, Onions and Roasted Red Peppers

Pesto is one of my very favorite flavors in the world!  I can't wait until 
summer to see my garden overflow with those beautiful basil  plants.  
Until then I had to use some store bought Pesto worries.......
it's great in a pinch!  

This is a fabulous meal for working moms.  It's so fast to put together 
and tasty enough for company.  I made mine vegetarian but you can 
add chicken or shrimp as well.  Tonight I just enjoyed focusing on the 
flavors of the caramelized onions, mushrooms 
and peppers.  This pasta is pretty filling and feeds 4 people with HUGE 
appetites or 6 normal ones. I served ours with a French baguette and 
Caesar salad.  

Jimmy and the kids loved it!  I think everyone had seconds!  Once Ty 
is home from college I'm going to have to make this for him and Cassie.  
They both love Italian food and Pesto is at the top of the list!  They will 
think I slaved all day......... yeah....let them think that.........   ;)

Kimchi Ramen Egg Foo Young with Cantonese Brown Sauce

Egg Foo Young is basically a Chinese omelet served with a brown sauce.  I made a fun version of this classic dish with Ramen!  Since my house is a Korean-American household so I like to add the addition of Kimchi for a extra little punch of heat and flavor.  

The great thing is that you can personalize this recipe by adding just about anything you have in the fridge.......pork, chicken,shrimp, bean sprouts, water chestnuts.....   Just don't forget the brown sauce!!   I hear the Brits don't eat brown sauce on their version.  I don't know what they are thinking.  I mean.....I got up and watched the wedding and everything (loved it by the way) but you Brits are wrong on this count! The brown sauce rocks your bloody socks off!!
