Semi-Homemade Wicked Pickles

My friends Khris and Jeff introduced me to Wickles Pickles one
night we were having get together to watch some Oklahoma City
Thunder Basketball.  I instantly fell in love with the sweet, spicy
dill pickles.  Fast forward a couple of months and I found a recipe
on Christy's Southern Plate blog about "Candied Dill Pickles". 
Hmmmm..... I thought.  That sounds like "wickles" without the heat.
I can fix that I thought.  I have a whole jar of red peppers I that I
got at the Asian Market across town.  I always keep them on hand
to add a pop of color and spice to the top of certain dishes.

Ahi Tuna Burgers with Asian Mayo, Arugula, Crispy Shallots and Pickled Ginger with Sweet Potato Fries

For Mother's Day this year I received the cookbook "My Father's 
Daughter" by Gwyneth Paltrow and I've been eyeing this recipe 
since May and finally got around to making it today.  I had to make 
a special trip over to my favorite fish  market because I wanted to 
use the best quality ahi  tuna.  You was totally worth the 
trip across town!

Kolaches with Homemade Peach Vanilla Bean Jam

A few weeks ago I ran across a recipe for Peach Vanilla Bean Jam 
on Annie's Eats.  I told Jim about it and he came home with some 
of the sweetest peaches I've ever seen.  We made the jam that 
weekend.  We are weird that way, we love to can things as a couple.  
That is weird.  It sounds weird.  Anyway, we try to can as often as 
we are able.  Our favorite things to give a nice hot water bath to are 
pickles and jams.    

Greek Pizza

Friday night I was in the mood for an Gyro but Friday's are normally Pizza nights at our house.  Well, I can solve that little problem.  Greek Pizzas!!!!!!!!  Jim had gone around the corner and picked me up a 1/2 pound of Gryo meat and some Tzatziki sauce from our little Greek place down the street so I was well prepared.  

I have to say they were great!  Bay and I even had a piece cold for breakfast this morning.  I know some people don't like that.  Some people gross out even more when I tell them how good cold pizza goes with hot coffee.  I know, I know......ewww.  I'm just weird enough to think it makes sense.   As my dear Florida mom would say.........we had the breakfast of champions!  That's basically anything not considered normal breakfast fare.

Boozy Bum Chickens with Homemade Cajun Seasoning

The week prior to Labor day I was intrigued by a new Irish chef named Donal Skehan.  I promptly checked my local library to see if they had a copy of one of his cookbooks.  They did!  They had his first cookbook called "Good Mood Food".  Donal says he isn't a chef but a home cook.  It shows in his recipes.  They are fresh, tasty, easy recipes perfect for my style of cooking.
