Spicy Buffalo Chicken Pizza with Blue Cheese Crumbsa and Celery




Jim and I are crazy about Buffalo Sauce.  Our very favorite way to have it is on my....


My Buffalo Chicken Salad consists of salad mix, celery, sharp cheddar cheese crumbles, blue cheese dressing and chicken poppers we get at Sam's. I make a sauce of Frank's Hot sauce and brown sugar to get a nice hot/sweet thing going.  You can click on the link above to see the entire recipe.
Anyway.... I decided to take our favorite weeknight meal and make it into a pizza.  Oh my!  Can you say......winner, winner, chicken dinner?  It was fan-freaking-tastic!  Bay came back for 3rds........ THIRDS people...she's only 11.
One interesting thing.......instead of buffalo sauce for the main sauce next to the crust, I used a healthy amount ...errr.... I mean an unhealthy amount of blue cheese dressing.  I like Marzetti Light Chunky Blue Cheese Dressing.  It's light but it sure doesn't taste like it.  Okay......go ahead...say it.  I can read your mind, you are thinking.......cold celery on pizza?  YES!  
It really gives you that Buffalo wing flavor in spades!  Go ahead.......try it and get back to me.  I know you'll like it.  ;)



Buffalo Chicken Pizza with Blue Cheese Crumbles and Celery

2 pre-made pizza crusts
1/2 cup blue cheese dressing 
1 (16 oz) pkg mozzarella cheese, shredded
1 (1/2 bag) chicken poppers, that have been pre-baked, chopped and 
dunked in special sauce (recipe below)
2 (2.25 oz) cans black olives
1/2 small red onion, chopped
blue cheese crumbles (however much you like)
AFTER BAKED............top with cold celery that has been diced finely.  

Preheat oven to 425.
Spread a blue cheese dressing over both pizza crusts.
Top with mozzarella cheese and all the other ingredients in order listed
EXCEPT celery.  
Bake for 10-15 minutes or until crust is golden brown.

Top with cold chopped celery and enjoy!
Special Sauce
1/2 cup Franks Hot Sauce
1/4 - 1/2 cup brown sugar
Mix together and put in a big Ziploc baggy with the chicken to coat.
Pour any excess sauce on pizzas. 
Makes two pizzas.

  1. Clever idea Mika and it looks very good. Nice thing about a pizza crust - it's a blank canvas for almost anything. The other day, we had Greek pizza inspired by yours - post up tomorrow.

  2. Mika, this sounds and looks fabulous! I've got a similar bbq chicken pizza that we love, and I know my hubby would really enjoy this! We also love our Friday night pizzas, so guess what's going to be on this weeks menu!

    Also, thank you for your kind words about my mom, she will be forever missed and in our hearts.
