Grilled Cheese with Pesto, Red Onion and Bacon with Sweet Potato Chips




For those of you who didn't know...April is National Grilled Cheese Month. 
It seems I made it just under the wire for my version of this classic sandwich!

I knew I wanted to use pesto in my sandwich as all of my family......everyone
(including my pups).....are a pesto lovers.  I was looking in the fridge, thinking 
to pair a roasted red peppers with the cheese and pesto but wouldn't you 
know........the last of my peppers went bad.  Oh well........not to worry!  I found 
that we had some BACON!  uh huh........I said it.......Bacon!!!!!!


Well, the combo of Sourdough bread, pesto, bacon, red onion and sharp 
cheddar was just amazing!  Bay came in and asked for another one.  I told 
her I thought one was more than enough but I would make them again soon.  
I'm sorta excited about the prospect myself!

I decided to make some sweet potato chips to go with the sandwich.  I just 
used my mandolin and cut the colorful disks, added a couple of tablespoons 
of olive oil and a couple of tablespoons of sugar, a tablespoon of salt and 
garam masala and baked for 15 minutes, turned them over and baked for 15 
more at 450 degrees. 


You don't have to use garam masala, you could use any spices you like.  
For instance, Cajun seasoning, Chipotle powder or even Chinese Five spice.  
The Cajun seasoning and Chipotle powder give the chips a nice little kick of 
heat that's just amazing!

Easter Dinner 2011



Happy Easter everyone!!  I hope you are all enjoying your 
Easter dinner with your families.  We had my mom over today and had 
a fabulous dinner I'd like to share with you.  First, I found this wonderful
recipe for ham glaze over at A Southern Fairy Tale.  The combo of the
 pineapple, chipotle peppers, honey and ginger was a big winner at our 
house. We love the hot/sweet slightly smoky flavor it gave the ham.

Cauliflower Shepherd's Pie (Low Carb)



Okay.....yes.....you did read that correctly.....this is a low-carb casserole.  I know I'm not known for having ANYTHING low-carb on my site but this is the exception!  Back before my daughter came home from Korea, Jimmy and I went on a THAT diet.  Ewwww.......I know!  Lord knows I could use THAT diet again but sorry Charlie!  It ain't happenin'!  Can you see the carrots in the background?  Carrots are NOT low-carb (especially if you put brown sugar in them.......guilty!)  

Anyway, I made this casserole back in the day and it was so delicious that we still crave it.  My 11 year old daughter Bay just came in for her THIRD helping!  It's seriously that good!!

Now......a little about my technique.  It's weird!  I know that, but it works so bear with me.  I start with cheese and one layer of cauliflower on the bottom.  Odd I know but that way the hamburger is not all loose and running around the plate.  It holds together much better when serving it up as well.  The other thing that's a little strange is that there is a small amount of cheese in the meat and thyme.  It just adds more cheesy goodness so just do it.    ;)

Buffalo Chicken Alfredo Pizza



Two of my favorite things are spicy food and pizza.  My buffalo chicken 
alfredo pizza definitely works on both counts!  This yummy pizza can be 
thrown together in just a few minutes after work and has some serious 
flavor!  The alfredo sauce evens out the sharpness of the hot sauce while 
the blue cheese adds a pop of tangy deliciousness.


I keep a big bottle of Frank's Buffalo sauce in my fridge at all times.  It goes 
great in so many things.  Some of my other favorites recipes are my Buffalo 
Chicken SaladBuffalo Chicken Soup and my Buffalo Alfredo Lasagna.

Eggs Ole' and Easy Chile Salsa



Our friends Kevin and Jennifer came back to spend the night and have fun 
this weekend.  This morning for breakfast I made them Eggs Ole'!  I first 
saw this recipe over at Plain Chicken's blog.  I just love her blog and knew 
right away that my friends would love it too and they really did!  All through 
breakfast I kept hearing "oh my gosh, this is so good" and that made me 
really, really happy!

The tag line on my blog says "sharing everyday dinners.........simple 
or extravagant" this is one of the simple but tasty ones! I used to make 
this back in the 80's all the time.  I told Jim that I was going to make this 
for Kevin and Jennifer when they came down and he said that I have 
been holding out on him.  We have been married almost 22 years and 
I've never made this for him!  Well.......Jim loved it and so did Kevin and 
Jennifer......not to mention....Tyler, Cassie, Tanner, Bailey, Shiloh, Kylan 
and Kenzie!

(they live down the street from us) for a hot dog cookout.  I wanted to 
bring something and have been looking for an excuse to make my 
Layered Cornbread Salad.  I'm also bringing my Fabulous French 
Onion Dip to have with chips.

Indian Tacos with Cornmeal Cheddar-Jalapeno Waffles



I have been craving an Indian Taco and the State Fair is still months 
away so I decided to make my own.  I have made the traditional Indian 
Fry bread before and I love it, but I wanted to try a different approach 
this time.  I found the Cornmeal Cheddar Waffles on recipes.com and 
thought jalapeno would be an amazing addition!
