Cornmeal Dusted Chicken Broccoli and Cheese Braid with Thyme and Rosemary

Well........once again I have been scanning Pinterest to get some dinner ideas and came across this Broccoli Cheddar Chicken Braid.  I love making these braids, they are so much fun to make!

I pretty much made the original recipe but I had to put a couple of my own tweaks here and there.  The main thing I did different was to use the no seam Pillsbury dough and to add cornmeal to the parchment
before I set the dough on it.  This kept the dough from sticking and added a great crunchy texture to the bread which can sometimes get a little soggy.  I also added garlic and thyme (because they are my favorite!)
to the chicken to mixture for added flavor.

Parmesan Eggs in a Croissant Nest with a Dijon Cream Sauce

I first spotted this idea when looking around on Pinterest. If you
haven't heard of Pinterest you are in for a treat. I can get lost on
that site for hours!  I've found some of the best ideas, recipes,
crafts and more on Pinterest.  Let me warn you though....it is
HIGHLY addictive!!

Long Boy Burgers

When I first saw these long boy burgers
over at Sunshine and Bones I knew I would
love them.  That's because I've used the
techinque before.  Do you remember my
Korean Open-Face burgers?  Here's a pic
to remind you...

Soyrizo Breakfast Burritos

There are so many great recipes out there that have Chorizo as an ingredient.
I was so sad because I couldn't use Chorizo because of it's high fat content.
I know there are lots of people that have to eat a low fat diet for health reasons
and I'm one of them.  That's why I'm so excited about Soyrizo!  I'm probably
the last person on the planet to hear about this stuff but I'm definitely on the
bandwagon now!

Homemade Big Mac's and Bay's Gotcha Day!

Those of you who regularly read my blog knw that my youngest child
Bay was adopted from South Korea when she was a baby.  Well, she
came home to us exactly 11 years ago today.  It's her "Gotcha Day!"
We celebrate by giving her a gift, this year it was a pair of Ariat boots that
she has been dying for just like mine.  I also made one of her favorite
meals, Homemade Big Macs!

Buffalo Chicken Pasta Salad

It is so hot in Oklahoma!  Last week this was the 7 day forecast!  Can you believe it?   I seriously think we live in hell.....

One way I've been beating the heat is to make cold pasta salads for dinner. A few weeks ago I posted my Mediterranean Tuna Pasta Salad and now I've got a new Buffalo Chicken Pasta Salad.  It's absolutely yummy and very addictive!   I like to pour some extra buffalo sauce on top before serving to
kick up the spice even more.   To make it even more special you can sprinkle some crumbled blue cheese chunks on top.  You will like it so much you will be fighting over the leftovers like my husband and I did.  Sadly, I have to report that he won......(insert sad face here).

Cornmeal Crusted Cherry Tart

This morning I wanted to make something special for my daughter Bay.  She and I were the only ones at home.  Jim and Ty had to work and Tan was spending the night at a friends house.  I know Bay loves cherries and luckily I had a can of cherry pie filling on hand.  I had to make something up that used stuff in my pantry because we haven't been to the grocery store yet this week.   This is what I came up with.

Flank Steak Tacos with Grilled Cabbage and San Francisco

Last Sunday was our last day of vacation.  I know......boo hoo!

Anyway, Jimmy made our dinner and did a fabulous job!  While
we were away we happened to see a Grill It! episode with Bobby
Flay.  Jim was intrigued and decided to use this recipe to
marinade to make some flank steak tacos.
