Spaghetti con Zucchini



It's time once again for my weekly Tessa Kiros recipe.  This week the theme over at IHCC is Pasta.  When I saw this recipe in Tessa's cookbook Twelve it reminded me of a similar recipe I'd been wanting to make out of Gwyneth Paltrow's cookbook.  



I really loved the combo of the fried zucchini with the parmesan and spaghetti.  The thing that sets Tessa's recipe apart is that she states to sprinkle on some chili oil as a finishing touch.  I've had a bottle in my pantry for ages just looking for a recipe to use it in. I served this with a marinated chicken breast that I cooked over charcoal.  The combo of the smoky, juicy chicken with the slightly spicy, sweet zucchini pasta was amazing.  I was surprised that such a simple dish could have such an impact on my family.  All of us came back for seconds!

Pesto/Hamburger White Pizza with Garlic Sauteed Spinach and Mushrooms


I enjoy coming up with new pizzas for my family and this one is really delicious!  It's got all my favorite things.......pesto, alfredo, garlic, mushrooms and cheese!   I tried to make a fast weeknight version of a spinach alfredo pizza and tried to add as much flavor as I could along the way. 

Jim loved the hamburger pesto mixture I added.  He said that he couldn't quite tell that it was hamburger because all the pesto goodness had melted into the meat. By sauteing both the spinach and the mushrooms in garlic butter before adding them to the pizza......well....you can imagine, right?  Right!  Garlicky, Pesto-y goodness! Oh my!

Mika's Deluxe Fish Sandwich

This is one of my easiest weeknight dinners.  I haven't
posted it before because I thought it was too simple.  
Now I realize that other mom's like me may enjoy a fast
and tasty meal their families will LOVE!  My boys request
this sandwich often on the weekends they are home from 
college.

Apple Bread with Cinnamon, Brown Sugar and Walnut Topping




I love quick breads especially in the Fall.  There's 
something very comforting about eating a piece of 
cinnamon-y Apple bread with a hot cup of coffee 
when the weather outside is turning colder.  This 
week at IHCC the theme is "Harvest Moon Foods 
Celebrating Fall's Bounty/Halloween themed foods" 
out of any Tessa Kiros cookbook.




I picked this apple bread with cinnamon, brown sugar 
and walnut topping.  This bread was a little different
than others I've made in the past.  It had the addition
of ground cardamom that gave it a wonderfully
warm addictive flavor.

Taco Rice Bowls

       
                     

   ~No Recipe Required~

This is one of my all time comfort foods. It's like nachos
over rice. So easy but so good! I usually make jasmine rice
in my rice cooker and taco meat using my homemade
taco seasoning mix with a bottle of dark amber bock beer
instead of water to add flavor.  Then you just add anything
you like....



This time I set out shredded sharp cheddar, black beans,
salsa, guacamole, lemon wedges, sour cream, green
onions, cilantro and black olives.  I also had some cute
orange and black "Halloween" tortilla chips on the side.
Just put the rice and meat in your bowl then pile on the
toppings!  I like to put cheese on mine then microwave
it for a few seconds to melt the cheese then continue
with the other toppings.

German Bierocks

I'm touching base with my German roots again today!
I made bierocks years ago with frozen bread dough you
get in the freezer section but it never turned out quite
like I wanted it to.  I've learned the trick is in the dough,
ever since I made my kolaches I've been using the
kolache dough for just about everything!
It seems to be a dough you can't screw up which makes
it a perfect dough in my opinion!  The beauty of it is.....
this dough works amazingly well in sweet or savory dishes.  
Don't be afraid to fill this dough with other fillings as well.
My husband and I already have a list a mile long with
potential ideas using this dough.  The process of making
and filling does take a while but it's all very easy and
definitely worth it in the end.

Pear Berry Crisp


We are still cooking with Tessa Kiros over at IHCC but this
weeks theme is "from the orchard".  With Fall in the air this
yummy Pear Berry Crisp just seemed to shout "make me"
from Tessa's Apples for Jam cookbook.  I loved that it was
so fast and easy to make.  I told Jim that this is a perfect
dessert to have for company this Fall because you just throw
it together and your house smells heavenly while it's cooking.

Tailgating at Oklahoma State University


Yesterday we met some of our best friends Kevin and
Jennifer in Stillwater to tailgate with my boys.  Both Tyler
and Tanner attend Oklahoma State and were really anxious 
to show them around the campus. Luckily we gave Ty and
Tan our tent to set up on Friday afternoon so we got a great 
spot!  We were right on Hester street which is the street the
band, players and cheerleaders make their procession to the
stadium.  







We brought lots of good food and I had to bring my famous
cheese ball.  It's one of Kevin and Jennifer's favorites!   I have
been making it since I was a young girl.  It's the only cheese
ball I ever make.  It's so good and very additive!

Fun Dough from Apples for Jam


This week at IHCC the Tessa Kiros theme is "potluck".  Well,
I took that to mean we could do anything.....anything at all.  
I chose to make the Fun Dough in Apples for Jam.  I had so
much fun.....errr.... I mean Bay had so much fun playing and
making the dough.  She wanted to make it blue.  My daughter
hates, and I mean HATES pink, so that was not an option.

Carrot Cake with Walnuts and Cream Cheese Frosting


 
Yesterday was my husband Jim's birthday.  For his cake I decided 
to make this Carrot Cake from Falling Cloudberries by Tessa Kiros.  
If you remember,I made cupcakes out of it last year for Jim's 
birthday.  What can I say, why mess with a good thing? Right?
